Wildflower means we don't steer the bees. Whatever's blooming within a few miles of the yard is what ends up in the jug, which is why the color and flavor shift from one harvest to the next.
It's strained, not filtered fine. The screen is coarse enough that pollen passes right through, so what it catches is wax and bits of comb. At bottling I warm it to approximately 100°F, never hotter than the bees keep it themselves, just enough to make it pour easily.
Twelve pounds at a time is aimed at people going through honey by the pound rather than the tablespoon: mead makers, bakers, restaurants, anyone using it as an ingredient rather than a topping.
It will still crystallize eventually. That isn't spoilage; it's what honey does when it hasn't been heat-treated and filtered clear. Set the jug in warm water, or scoop out what you need and rewarm it gently.
Net weight 12 lb.
