Wildflower means we don't steer the bees. Whatever's blooming within a few miles of the yard is what ends up in the jar, which is why the color and flavor shift from one harvest to the next.


It's strained, not filtered fine. The screen is coarse enough that pollen passes right through, so what it catches is wax and bits of comb. At bottling I warm it to approximately 100°F, never hotter than the bees keep it themselves, just enough to make it pour easily.


It will still crystallize eventually. That isn't spoilage; it's what honey does when it hasn't been heat-treated and filtered clear. In a squeeze bottle this is worth knowing before it happens: set the bottle in warm water for several minutes, giving it longer than you'd expect, and wait until it's fully liquid again before squeezing. Forcing it through the tip while it's still grainy will clog it.
